CHICORY
Chicory is delicious! And no, it has nothing to do with chickens. It’s a collective name for different plants including escarole (endive), and of course, chicory itself. Most of these plants are kind of bitter. During hard times, chicory was even used to make a type of coffee. But the bitterness of this plant is not always what it is grown for. Chicory is often used as a source of inulin: a type of fructose sugar. Chicory can be your coffee and the hint of sweetness you add to it!
